We tasted a lot of coffees before we found the one. Vietnamese weasel coffee stopped us cold — naturally sweet, bold without any bitterness, smooth enough to drink straight. We serve it two ways: cold-brewed or slow-dripped through a traditional phin filter, both served over ice. Both black, both brilliant. And if you want it the classic Vietnamese way — a little condensed milk, just less than tradition calls for — we do that too.

Why Weasel?

When French colonists brought coffee to Vietnam's highlands in the 19th century, the farmers who grew it were forbidden from drinking it. So they found another way in.

They discovered that wild weasels — known elsewhere as civets — would eat only the ripest coffee cherries. Much like bees transform nectar into honey through their digestive process, the weasel's natural enzymes transform the coffee bean — breaking down bitterness and unlocking a deep, lasting sweetness that no roaster can replicate. The beans are then carefully collected, thoroughly washed, dried, and roasted.

What you taste is the result of that transformation — smooth, naturally sweet, and unlike anything else.

What started as an act of defiance became one of the most sought-after coffees in the world. We cold-brew it and serve it over ice so you can taste exactly why.
